Since it is Monday and I’m all about meal prepping, let’s talk about an easy way to pack salads for the week! I love easy lunches since it’s the meal that tends to be hardest to make even on days where I’m home all day. These cobb salad cups take lunch to the next level, they’re perfectly portioned to have as a side salad or even to have for parties or weekend appetizers for guests!
I could honestly live on salads, especially on these cobb salad cups. When we were on our honeymoon earlier this year, the food at the Sandals resort was ROUGH, like all we ate was chips, rice and cheeses because that’s all there was that didn’t look like a pile of poop. Eating those 3 things for over a week started to take a toll on us (ok, ok, we also lived on margaritas) and every night we were so excited to go to all of the resort events but we got so tired all we could do was sit around (we may or may not have binge watched hgtv too)! Sitting in the sun all day didn’t help our energy levels either, but for healthy people who eat a pretty clean diet with lots of veggies we knew our bodies were craving good nutrients!
Needless to say, we’ve been on a pretty serious salad kick ever since then! Plus we get to use my favorite salad dressings from Primal Kitchen which makes me even happier! I used honey mustard in these cobb salad cups and it give it the perfect amount of flavor!
4 pieces cooked bacon
3 cups romaine lettuce, finely chopped
2 1/2 tbsp honey mustard dressing
2 roma tomatoes, diced
1 avocado, diced
4 green onions, sliced
2 cups shredded rotisserie or precooked chicken
1 cup organic blue cheese or goat cheese
Boil the eggs by placing eggs in a small pot and covering with water. Bring them to a boil, cover, remove from heat and let sit for 12 minutes
Run eggs under cold water and let cool. Once cool then peel eggs and dice into small pieces
In a small bowl toss together finely chopped romaine and honey mustard dressing
In desired serving cups evenly distribute and layer eggs, romaine lettuce, diced tomatoes, chicken, avocado, blue cheese, bacon and green onions
