I haven’t had french toast sticks since I was a kid. I think the last time I had them was from burger king with my sister when I was like 10. I haven’t eaten fast food in so many years and a lot of restaurants don’t offer french toast sticks (and if they do they’re not gluten free) SO I figured why not make my own! These vegan pumpkin french toast sticks are super easy to make and are a serious hit!
I wrote on my Easy Pumpkin Bread (which is the star of the show so go make some first!!) post that we ate the whole loaf in one day which was so worth it, AND an excuse to make more so I can make these french toast sticks! This is the best breakfast for kids or weekend brunches – they’re perfect for finger food or to make in individual cups at parties for people to grab and go!
To make it even better my sister came over when I made this so it was like a real FLASHBACK to childhood and all of our dreamy foods before life caught up to us and started making us worry about what we’re eating. Although, since my body reacts way better to gluten free foods I can eat all the vegan pumpkin french toast sticks in the world and feel even better about life afterwards.

I’m pretty sure these are going to be a tradition in our house – top them with coconut yogurt for breakfast or ice cream for dessert – we’ve done it all and they’re all equally delicious (but let’s be real ICE CREAM IS BETTER).
Guys I’m a true condiment junkie and maple syrup is no exception. I legit lick the plate clean after eating these vegan pumpkin french toast sticks and I’m not ashamed of it.

VEGAN PUMPKIN FRENCH TOAST STICKS
In a medium sized bowl whisk together milk, ground flax, maple syrup and pumpkin pie spice and let sit for 10 minutes
Heat a nonstick skillet to medium heat, spray with coconut oil spray
Dip each stick quickly in the mixture to coat fully and place on the skillet
Cook each piece 3 minutes on each side or until pieces are golden brown
Serve with maple syrup
